Soup
4 cups dashi or low-sodium vegetable broth
3 tbsp white or yellow miso paste
1 cup firm tofu, cubed
1 cup enoki mushrooms, trimmed
½ cup dried wakame seaweed, rehydrated
2 scallions, thinly sliced
1 tsp sesame oil
Optional: thin slices of fresh ginger
To Finish
Additional scallions to garnish
Pinch of white sesame seeds
Optional: drizzle of low-sodium tamari
Warm broth over medium heat. Do not boil. Ladle a small amount of warm broth into a bowl, whisk in miso paste until fully dissolved, then stir back into the pot. Add tofu, enoki mushrooms + rehydrated wakame. Simmer gently for 3–4 minutes. Finish with sesame oil + scallions.
