Rich Miso Soup w/ Enoki Mushrooms, Wakame Seaweed + Tofu

Soup

  • 4 cups dashi or low-sodium vegetable broth

  • 3 tbsp white or yellow miso paste

  • 1 cup firm tofu, cubed

  • 1 cup enoki mushrooms, trimmed

  • ½ cup dried wakame seaweed, rehydrated

  • 2 scallions, thinly sliced

  • 1 tsp sesame oil

  • Optional: thin slices of fresh ginger

To Finish

  • Additional scallions to garnish

  • Pinch of white sesame seeds

  • Optional: drizzle of low-sodium tamari

Warm broth over medium heat. Do not boil. Ladle a small amount of warm broth into a bowl, whisk in miso paste until fully dissolved, then stir back into the pot. Add tofu, enoki mushrooms + rehydrated wakame. Simmer gently for 3–4 minutes. Finish with sesame oil + scallions.
