Adaptogenic Mushroom + Barley Soup

  • 1 tbsp extra virgin olive oil

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 2 medium carrots, diced

  • 2 celery stalks, diced

  • 1 cup mixed mushrooms (shiitake, maitake, cremini, or reishi, if available), sliced

  • 1 cup pearl barley, rinsed

  • 6 cups vegetable broth (or mushroom broth for extra depth)

  • 1 medium parsnip or potato, diced

  • 1 bay leaf

  • 1 tsp fresh thyme, or 1/2 tsp dried

  • 2 tbsp chopped fresh parsley, to finish

  • 1 tsp lemon juice, to finish

  • Sea salt + black pepper, for taste

  • Optional: 1/2 tsp ground turmeric
