1 tbsp extra virgin olive oil
1 medium onion, diced
2 garlic cloves, minced
2 medium carrots, diced
2 celery stalks, diced
1 cup mixed mushrooms (shiitake, maitake, cremini, or reishi, if available), sliced
1 cup pearl barley, rinsed
6 cups vegetable broth (or mushroom broth for extra depth)
1 medium parsnip or potato, diced
1 bay leaf
1 tsp fresh thyme, or 1/2 tsp dried
2 tbsp chopped fresh parsley, to finish
1 tsp lemon juice, to finish
Sea salt + black pepper, for taste
Optional: 1/2 tsp ground turmeric
