Golden Chickpea Curry
1 tbsp coconut oil or olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp smoked paprika
1-14 oz can of diced tomatoes
2-15 oz cans of chickpeas, rinsed + drained
1-14 oz can full-fat coconut milk
2 cups baby spinach or 1 medium zucchini, halved + sliced thin
1 tbsp fresh lemon juice
Sea salt + black pepper, to taste
Fresh cilantro, chopped (to finish)
Cooked basmati rice or quinoa for serving
