Golden Chickpea Curry

  • 1 tbsp coconut oil or olive oil

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 2 tsp ground turmeric

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1/2 tsp smoked paprika

  • 1-14 oz can of diced tomatoes

  • 2-15 oz cans of chickpeas, rinsed + drained

  • 1-14 oz can full-fat coconut milk

  • 2 cups baby spinach or 1 medium zucchini, halved + sliced thin

  • 1 tbsp fresh lemon juice

  • Sea salt + black pepper, to taste

  • Fresh cilantro, chopped (to finish)

  • Cooked basmati rice or quinoa for serving
