Herbed Turkey Meatball

  • 1 lb organic turkey, ground

  • 1 small organic onion, finely minced

  • 2 cloves of garlic, grated

  • 1 pasture-raised egg

  • ¼ cup almond flour or breadcrumbs

  • 2 tbsp fresh parsley, finely chopped

  • 1 tbsp fresh oregano, or 1 tsp dried

  • 1 tsp sea salt

  • ½ tsp black pepper

  • Optional: pinch chili flakes, for warmth

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves of garlic, minced

  • 1 large carrot, diced

  • 1 stalk celery, diced

  • 1 can (14 oz) organic crushed tomatoes

  • 4–6 cups bone broth (chicken or turkey — gut-supportive)

  • 1 bay leaf

  • ½ tsp smoked paprika

  • ½ tsp cumin

  • Sea salt + black pepper, to taste
