Kimchi Fried Cauliflower Rice w/ Egg + Scallion
A fermented, fiber-rich bowl designed to feed your inner ecosystem.
Probiotic + prebiotic in a single dish — because a thriving microbiome needs both.
Kimchi delivers live bacterial cultures alongside the prebiotic fiber those cultures need to survive + colonize. Cauliflower adds fermentable fiber that feeds the beneficial bacterial populations responsible for producing short-chain fatty acids. Eggs contribute choline, which supports the integrity of the gut lining itself.
Fried Cauliflower Rice
3 cups cauliflower rice, fresh or frozen
½ cup kimchi, roughly chopped, plus extra to serve
2 eggs, beaten
½ cup frozen peas
1 medium carrot, finely diced
3 scallions, sliced
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 tbsp sesame oil
1 tbsp coconut aminos or tamari
1 tsp rice vinegar
Sea salt + black pepper, to taste
Optional: sesame seeds + chili flakes to finish
Benefits
Kimchi → live Lactobacillus cultures seed the gut microbiome alongside prebiotic fiber that sustains those populations — regular consumption measurably increases microbial diversity
Cauliflower → fermentable fiber feeds the bacteria responsible for butyrate production while glucosinolates support microbial diversity + protect the gut lining
Eggs → one of the richest dietary sources of choline, essential for maintaining intestinal wall integrity
Peas → prebiotic fiber selectively feeds beneficial Bifidobacterium + Lactobacillus populations
Garlic + ginger → function as prebiotics, promoting beneficial bacterial species while helping suppress pathogenic populations
Scallions → fructooligosaccharides feed beneficial gut bacteria + support short-chain fatty acid production
Sesame oil → anti-inflammatory fats support a gut environment where beneficial microbial populations thrive
