Roasted Root Vegetable Bowl

  • 2 medium beets, peeled + sliced into rounds

  • 3 large carrots, cut into spears

  • 2 medium parsnips, cut into wedges

  • 2 medium yellow potatoes, cut into wedges

  • 3 green onions, thinly sliced

  • 2 tbsp olive oil

  • 1 tsp sea salt

  • 1/2 tsp black pepper

  • Optional: fresh thyme or rosemary before roasting

Method Preheat oven to 400°F. Toss all root vegetables in olive oil, salt, and pepper. Spread evenly on a parchment-lined baking sheet — do not crowd. Roast 35–40 minutes, flipping halfway, until caramelized and tender. Finish with fresh green onion.
