Stewed Berry Chia Lymph Glow Pudding

Stewed Berry Base
1 cup mixed berries (blueberries, raspberries, blackberries or cherries — fresh or frozen)
1/4 cup water
1 tsp fresh lemon juice
1 tsp raw honey or maple syrup (optional)
1/4 tsp cinnamon
Small pinch of sea salt
Simmer berries and water in a small saucepan over low heat for 5–7 minutes until soft and slightly thickened. Stir in lemon juice, cinnamon and honey if using. Allow to cool slightly.
Chia Lymph Support Pudding
2 tbsp chia seeds
3/4 cup unsweetened almond or coconut milk
1/2 tsp vanilla extract
1 tsp lemon zest
Whisk together and allow to sit for 10 minutes, then stir again to prevent clumping. Refrigerate for 2 hours or overnight until thick.
Layer chia pudding with stewed berries in a jar and top with fresh berries before serving.
