Roasted Sweet Potato + Greens Salad w/ Ginger Miso Dressing

Roasted Sweet Potato
2 medium sweet potatoes, peeled + cubed
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp garlic powder
Sea salt + black pepper to taste
Optional: pinch of cayenne
Toss sweet potato cubes with olive oil + spices until evenly coated. Spread in a single layer on a parchment-lined baking sheet. Roast at 425°F (220°C) for 25–30 minutes, flipping halfway, until caramelized + tender.
Salad Base
3 cups mixed greens (kale, green leaf lettuce, spinach)
1/2 cup shredded purple cabbage
1/2 cup shredded carrot
1/2 avocado, sliced or cubed
Fresh parsley or cilantro to finish
Build greens in a wide bowl. Layer shredded cabbage, carrot + avocado over top. Add roasted sweet potato warm directly from the oven.
Ginger Miso Dressing
2 tbsp white miso paste
1 tbsp apple cider vinegar
1 tbsp olive oil or sesame oil
1 tsp fresh ginger, grated
1 tsp raw honey or maple syrup
2–3 tbsp warm water to thin
Whisk all ingredients together until smooth. Drizzle generously over salad just before serving.
