Roasted Sweet Potato + Greens Salad w/ Ginger Miso Dressing

Skin protection + deep nourishment.

Beta-carotene-loaded sweet potato + dark leafy greens deliver a concentrated dose of fat-soluble vitamins that your skin depends on for cell renewal, UV protection + a healthy, even tone.

This vibrant salad works on multiple levels for skin health — providing provitamin A, vitamin K, anti-inflammatory compounds + a gut-supportive dressing that keeps the skin-gut axis strong + your complexion reflecting what's happening inside.

Roasted Sweet Potato

  • 2 medium sweet potatoes, peeled + cubed

  • 1 tbsp olive oil

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • 1/2 tsp garlic powder

  • Sea salt + black pepper to taste

  • Optional: pinch of cayenne

Toss sweet potato cubes with olive oil + spices until evenly coated. Spread in a single layer on a parchment-lined baking sheet. Roast at 425°F (220°C) for 25–30 minutes, flipping halfway, until caramelized + tender.

Salad Base

  • 3 cups mixed greens (kale, green leaf lettuce, spinach)

  • 1/2 cup shredded purple cabbage

  • 1/2 cup shredded carrot

  • 1/2 avocado, sliced or cubed

  • Fresh parsley or cilantro to finish

Build greens in a wide bowl. Layer shredded cabbage, carrot + avocado over top. Add roasted sweet potato warm directly from the oven.

Ginger Miso Dressing

  • 2 tbsp white miso paste

  • 1 tbsp apple cider vinegar

  • 1 tbsp olive oil or sesame oil

  • 1 tsp fresh ginger, grated

  • 1 tsp raw honey or maple syrup

  • 2–3 tbsp warm water to thin

Whisk all ingredients together until smooth. Drizzle generously over salad just before serving.

  • Purple cabbage → anthocyanins + vitamin C work together to support collagen production + protect skin from environmental damage

  • Shredded carrot → additional beta-carotene + biotin that support healthy skin, hair + nail structure

  • Avocado → monounsaturated fats + vitamin E help the skin retain moisture and allow fat-soluble vitamins in this bowl to absorb fully

  • Ginger → potent anti-inflammatory that helps calm reactive, inflamed or congested skin from the inside

  • Miso → fermented + probiotic-rich, supporting gut microbiome balance which is directly linked to skin clarity + reduced inflammatory skin conditions

  • Apple cider vinegar → supports digestive function + helps maintain the internal pH balance that often reflects on the skin's surface
