Turkey Miso Noodle Bowl

  • 8 oz rice noodles, or soba noodles

  • 1-2 cups turkey meat, shredded

  • 2 soft-boiled eggs

  • 1 cup baby boo choy, or spinach

  • 1/2 cup scallions, finely chopped, for garnish

  • Sesame seeds, for garnish

  • Optional: fresh lime wedge, 1 tbsp chili crisp or sambal


Broth Base

  • 6 cups filtered water

  • Turkey carcass

  • 1-2 tbsp white or yellow miso paste

  • 1 tbsp fresh ginger, grated

  • 2 cloves of garlic, minced

  • 1 tbsp tamari, or coconut aminos

  • 1 tsp toasted sesame oil
