Roasted Cauliflower w/ Tahini-Lemon Dressing

Roasted Cauliflower

  • 1 whole head of cauliflower, trimmed + leaves removed

  • 3 tbsp extra virgin olive oil

  • 1 tsp ground cumin

  • 1/2 tsp ground paprika

  • Sea salt + black ground pepper, to taste


Tahini-Lemon Drizzle

  • 3 tbsp tahini

  • Juice of 1 lemon

  • 1 small clove of garlic, grated or pressed

  • 2-3 tbsp warm water, to thin

  • Sea salt, to taste

  • Optional: 1 tsp maple syrup or honey

Additional Optional Toppings

  • Fresh parsley, chopped

  • Pomegranate seeds, or diced tomatoes

  • Toasted sesame seeds
